Chocolate Crunch Cake

Chocolate Crunch Cake

A cross between a brownie, a chocolate fondant and a dense mousse. That’s how amazingly delicious this cake is. It’s fudgy at the bottom, squidgy and soft in the centre and has a crackle at the top. The addition of poppy seeds or cacao nibs give a hidden crunch. You could serve it with vanilla ice cream, poached fruit or a dusting of cocoa powder or icing sugar, but it’s equally delicious on its own. It’s best served once it’s cooled and will keep well in the fridge.   Here is what you need:- 200g butter 200g dark chocolate 5 eggs at room temp 250g light...

Leek, Onion & Goat’s Cheese Tart

I cooked this for lunch last Sunday, it’s quick, easy, delicious and ideal as a light dish. I used two sheets of ready rolled puff pastry, which were absolutely crispy and flaky. I also added pesto, fennel and bacon for more flavour. Peanut Butter Chocolate Brownies

Chocolate, peanut butter, fudge brownies, ganache frosting….. what else could you ask for? These brownies are loaded with chocolate and peanut butter. I held back on the sugar to avoid an overload of sweetness. I topped these brownies with chopped Reese’s Peanut Butter Cups. I doubt they are available locally, however a chopped Snickers bar may be a good substitute and would also add some crunch. You may also omit it altogether and use the ganache alone as topping. Here is what you need:- 100g butter 60g dark chocolate, chopped 60g milk chocolate, chopped 100g caster sugar 2 tsp...

Strawberry Basil Loaf Cake

Strawberry Basil Loaf Cake

This is the last of the baked goods I’m going to prepare using strawberries. It appears to be the beginning of the end of their season, unfortunately. The strawberry and basil combination in this cake is delightfully fresh, while the maple syrup adds a pleasant touch of sweetness. The use of buttermilk gives a soft, moist texture, completing the whole cake. Makes one loaf 115g butter 230g buttermilk 100g caster sugar 55g light brown sugar 85g maple syrup 2 eggs 290g plain flour + 2 tbsp 1 tsp bicarbonate of soda 1 tsp baking powder 1 tsp salt zest of one lemon 250g chopped strawberries...
