Peanut Butter Chocolate Brownies

Chocolate, peanut butter, fudge brownies, ganache frosting….. what else could you ask for? These brownies are loaded with chocolate and peanut butter. I held back on the sugar to avoid an overload of sweetness. I topped these brownies with chopped Reese’s Peanut Butter Cups. I doubt they are available locally, however a chopped Snickers bar may be a good substitute and would also add some crunch. You may also omit it altogether and use the ganache alone as topping.

Fudgy Peanut Butter & Chocolate Brownies

Here is what you need:-

100g butter

60g dark chocolate, chopped

60g milk chocolate, chopped

100g caster sugar

2 tsp instant coffee

2 tsp vanilla extract

2 eggs

60g cocoa powder

65g plain flour

1/4 tsp salt

125g creamy peanut butter

1 tbsp. butter, softened

1 tbsp. icing sugar

For the frosting

110g double cream

130g dark chocolate, chopped

1 tbsp. creamy peanut butter

2 tsp vanilla

Line and grease the base and sides of an 8×8 inch square cake pan. Preheat the oven to 170C.

Melt the butter and dark chocolate in a bowl set over a pan of simmering water. Once it is melted and smooth remove the bowl from the heat. Add the sugar and coffee to the chocolate mixture, whisking them in by hand, followed by the vanilla and eggs. Whisk until smooth. Next, stir in the cocoa powder, flour and salt until smooth and just combined. The mixture will be thick.

In a small bowl mix together the peanut butter, icing sugar and butter until smooth.

Pour half the batter in the pan and spread out to reach the corners. Dollop teaspoons of the peanut butter mixture all over followed by the chopped milk chocolate. Spread the remaining batter carefully on top.

Bake for about 20-25  mins until the brownies are set on top. Allow to cool completely before frosting.

To make the frosting, heat the cream in a saucepan until just about to boil. Remove from heat and stir in the chocolate and peanut butter until creamy and smooth.

Spread the frosting over the brownies and sprinkle with the chopped Snickers if using. Allow the frosting to set. Cut the brownies into 16 squares and serve.
