Leek, Onion & Goat’s Cheese Tart

I cooked this for lunch last Sunday, it’s quick, easy, delicious and ideal as a light dish. I used two sheets of ready rolled puff pastry, which were absolutely crispy and flaky. I also added pesto, fennel and bacon for more flavour.

Leek, Onion & Goat’s Cheese Tart

Here is what you need:-

2 sheets ready rolled puff pastry

4 spoons pesto

1 leek, finely sliced

1 onion, finely sliced

1 fennel bulb, finely sliced

250g soft goat’s cheese

4 slices bacon, chopped

100g pine nuts, toasted

egg wash

Prepare two baking trays lined with baking parchment. Unroll the puff pastry sheets on each baking tray. Score a border of about 2cm around each sheet. Prick the centre all over with a fork. This allows the border to rise and the centre to remain flat during baking. Brush the borders with egg wash. Set aside.

Preheat the oven to 200C. Heat some olive oil in a frying pan and add the vegetables. Fry until softened. Set aside to cool. Fry the bacon until crisp and set aside.

Spread to 2 tbsp. of pesto in the centre of each puff pastry sheet. Spread the vegetables evenly on both sheets. Dollop pieces of goat’s cheese all over, then sprinkle with the bacon followed by the toasted pine nuts.

Bake for about 20 mins or until the border has puffed up and is golden brown in colour.
