I’ve been craving coconut cake for a while now and I finally got down to baking it yesterday. I love this cake because it is rich and moist and the coconut flavour is very present.

Here is what you need:-

125g butter, softened

1/2 tsp coconut essence

200g caster sugar

2 eggs

40g coconut

200g self raising flour

300g sour cream or crème fraiche

60ml milk

For the topping

250ml double cream

2 tbsp. caster sugar

2 tbsp. Malibu (optional)

200g berries of your choice to top the cake

Grease the bottom and sides of a 23cm cake tin. Line the base. Preheat the oven to 180C (gas).

Cream the butter, essence and sugar in a mixer until light and fluffy. Beat in the eggs one at a time, beating well until combined.

Lower the speed of your mixer and add 1/3 of the flour and coconut mixture followed by half the cream and all the milk. Repeat the process ending with the flour and coconut mixture ensuring it is well combined.

Pour the mixture into the tin and bake for about 35 – 40 mins depending on your oven. Insert a toothpick in the centre to test for doneness. It should come out clean.

Leave the cake to cool completely before adding the topping.

For the topping pour the cream into a mixing bowl and add the sugar and liquor if using. Whisk until soft peaks form.

Spread the cream over the cake and top with the berries.
