Blueberry & Cherry Galette

A quick and easy treat to prepare. A galette is similar to a pie but it’s baked free form. It’s equally delicious but less fancy. I prepared this with what I had available, blueberries and cherries and cream cheese for the base.


Here is what you need:-

For the pastry

225g plain flour

2 tbsp. sugar

1 tsp vanilla extract

pinch of salt

115g cold butter

1 egg

For the filling

280g fruit (a mix of blueberries* and cherries)

70g + 2 tbsp. sugar

1 tbsp. lemon juice

4 tsp cornflour

200g cream cheese

1 egg yolk

pinch of nutmeg

Place flour, sugar and salt in the bowl of a mixer. Mixer lightly to combine. Add the butter and beat until it resembles breadcrumbs. Add the egg and vanilla and 2 tbsp. of cold water if the mixture appears dry. Mix to form a dough.

Wrap the dough in cling film and refrigerate for an hour or more.

For the filling toss the fruit,  70g sugar, lemon juice, cornflour in a bowl. Stir to coat the fruit.

Whisk the cream cheese, egg yolk,  2 tbsp. sugar and nutmeg in a separate bowl.

Roll the dough to a 30cm circle and place on a baking sheet covered with baking parchment. Spread half the cream cheese mixture over the dough leaving a 2 inch border. Top with the fruit. Fold the edge of the dough over the filling and drizzle the remaining cream cheese over the fruit. Refrigerate for about 30mins or more.

Preheat the oven to 220C (gas)

Put the baking sheet with the galette on another baking sheet. Brush the edges with milk and sprinkle with some sugar if desired. Bake for 20 to 25 mins.

Leave to cool before slicing.

*Blueberries may be fresh or frozen
