Caramel Swirl Bars

Scrumptious cake-like bars, swirled with caramel and enhanced with chocolate chips and pecans. They are also a breeze to prepare.

Caramel Swirl Bars

Here is what you need:-

170g butter

215g light brown sugar

1 1/2 tsp baking powder

1/4 tsp salt

2 tsp vanilla extract

3 eggs

280g plain flour

100g pecans

160g dark chocolate chips

1/2 can caramel (carnation)

Preheat the oven to 180C (gas)

Prepare a 20×30 baking dish (I used a ceramic oven dish). Line it with foil and lightly butter the foil. Leave an overhang to facilitate removal after baking.

In a large saucepan, melt the butter over medium heat. Once melted remove from heat and leave to cool slightly until just warm. Stir in the sugar, baking powder, salt and vanilla until well blended.

Add the eggs one at a time, mixing well after each one. Stir in the flour until just combined. Fold in the nuts and chocolate chips until evenly distributed.

Pour half the mixture in the dish, spreading evenly. Dot heaped teaspoons of caramel over the batter. Then drop spoonfuls of the remaining batter over the top. Use a knife to gently swirl the mixture.

Bake for 25 to 30 mins, until nicely browned on top and a toothpick inserted in the centre comes out clean. Cool completely in the pan over a wire rack then cut into bars.
