Vegetable Stew

The recipe below is a one pot, feel good dish. A dish that’s hearty, healthy and ideal for those looking at some guilt free post holiday food.

Lots of vegetables and no fuss. The stew is easy to prepare. I served mine with some buttered basmati rice.

Here is what you need for 6 persons:-

4 sweet potatoes

3 carrots

1 onion

1 fennel bulb

1 leek

2 tsp paprika

handful of baby spinach leaves

1 can butter beans, drained and rinsed

1 can chickpeas, drained and rinsed

1 can chopped tomatoes

400ml vegetable stock

olive oil

Peel and chop all the vegetables into chunks. Heat some olive oil in a large sauce pan and add all the vegetables. Sprinkle over the paprika.

Sautee the vegetables, stirring, until lightly browned, about 10 minutes. Add the canned tomatoes and stock. Bring to a boil and simmer for about 20 minutes.

Add the butter beans, chickpeas and spinach. Mix everything well and cook for a further 10 minutes. Turn off the heat and serve with basmati rice or naan bread if you wish.
